Sangsaka
Intimate wood-fired Indonesian dining in Seminyak, built on smoke, spice and Javanese home recipes.
Smoke, spice and a small room
Sangsaka sits on a side street off the Petitenget strip in Seminyak, and it deliberately stays small. The room is dim and warm, with dark wood, an open fire and a long bar wrapped around the kitchen, so diners watch the cooking happen.
The food is Indonesian, but cooked with restraint and a modern eye. Wood-fired ovens and native spices do most of the work, and the tasting menus draw on Javanese home recipes and less common regional ingredients. The Honeycombers points to dishes such as ikan pesmol and sate kelapa, alongside a seasonal tasting menu.
Executive chef Kieran Morland, who also owns Luma in Canggu, works with group head chef Maxie Millian; the restaurant belongs to the same family as Merah Putih, another refined Indonesian address on the island. Menus change with the season, so use the dishes above as a guide to style rather than a fixed list.
