SHUN
An eight-seat Edomae omakase counter in Berawa, Canggu, with a daily-changing menu.
Edomae sushi, at close range
SHUN is a Japanese counter in Berawa, Canggu, and its scale is part of the appeal. The omakase counter has eight seats and offers 14- or 19-course menus, with a separate ten-seat enclave for à la carte dining, so 18 guests at most at a time.
Head chef Mark Jeremie Oliver trained in the classic Edomae sushi tradition, a style built around cured, aged and lightly seasoned fish, and layers contemporary ideas and techniques on top. Guests hand the menu to the chef: it changes daily, follows the produce, and combines select imports with locally sourced ingredients.
Seatings run at 6 pm and 8 pm, Tuesday to Sunday, and bookings are taken by message. The restaurant is part of the Tavolo group and sits at The Komu Hotel. As with any omakase counter, the specific fish served depends on the day, so plan on a meal of discovery rather than a fixed list.
