Few cities have changed their culinary reputation as quickly as Seoul. This guide brings together the restaurants that define modern Korean cooking, the classical tables that preserve its traditions, and the hotels that make the best bases for a food-focused stay.

The new Korean table

Seoul’s most interesting restaurants start from the Korean pantry: jang, the fermented soy and chilli pastes; kimchi in its many regional forms; grains, wild greens and seafood. Over the past fifteen years, chefs have carried these foundations into tasting menus that feel both modern and unmistakably Korean. Mingles and Jungsik, both in Cheongdam, are the two names most often associated with that movement, and each shows a different side of it.

Classical cuisine

For a more formal expression of Korean food, inspired by the refinement of the royal court, La Yeon at The Shilla remains a reference. It is the meal to plan early in a trip, as a way of understanding the structure and rhythm of a traditional Korean menu.

Markets and specialists

Seoul’s everyday food culture is just as rewarding. Gwangjang Market, one of the oldest in the city, is known for mung-bean pancakes, knife-cut noodles and yukhoe, seasoned raw beef. Across the city, restaurants devoted to a single dish, naengmyeon cold noodles, gomtang beef soup or Korean barbecue, are often the most memorable meals of a visit.

Where to stay

Four Seasons Hotel Seoul puts the palaces within walking distance and has one of the city’s strongest bar and restaurant line-ups. The Shilla Seoul offers gardens and calm on the slopes of Namsan, while Signiel Seoul, high in Lotte World Tower, is the choice for panoramic views.

Practical notes

The most sought-after restaurants are often booked weeks ahead, and some accept reservations only through Korean platforms; hotel concierges can help. Menus change with the seasons and are best confirmed when booking.
