Dessert as a full dinner

Room4Dessert began in New York in 2005 and moved to Ubud, Bali, where chef Will Goldfarb has run it for about a decade. The 15-course tasting menu comes in three stages: five savoury snacks at L’hort, five desserts in the dining room and five petits fours on the terrace.

The cooking combines Indonesian ingredients with bold medicinal herbs, uses little refined sugar and salt, and aims for circular self-sufficiency, with non-alcoholic, alcoholic or natural-wine pairings. Goldfarb calls the site an immersive sensory banjar: around the restaurant are Powder Room, a shop for sweet and savoury treats; Shelter Island, a ten-room guesthouse; the R4D Academy cooking school, founded in 2020; and a food forest that composts the restaurant’s waste.
