Mudan
A Taipei tempura counter with two seatings a day and a minimalist, dramatically lit room; two Michelin stars.
The Restaurant
Mudan is a tempura restaurant in Taipei. When Michelin inspectors described it in 2021, they noted a minimalist room in which the dinnerware is dramatically lit like works of art. The chef uses seasonal ingredients from Taiwan and Japan in a light batter, fried in extra-virgin sesame oil, and diners are given sea salt, lemon juice and tentsuyu.
Service runs in two seatings, at 12:30 and 18:30, and cooking starts only once the whole party has arrived.
