Hābu
A Kaohsiung kaiseki restaurant that cooks with traditional Chinese medicinal herbs; one Michelin star.
The Restaurant
Hābu is a Kaohsiung restaurant that brings Chinese herbal medicine into Japanese kaiseki. Its founder, Mr. Lu, comes from a family of traditional medicine practitioners, and the herbs come from the family’s wholesale business and go into signature spice blends. FTV News describes it as Taiwan’s first starred restaurant inspired by traditional medicine.
One dish reported is a crisp red-date shell filled with date purée. Summer desserts use French marigold and thyme, chosen as cooling herbs, and executive chef Tsai Chih-fan says the summer menu leans on red ingredients and milder, refreshing spices.
