The Restaurant

JL Studio is the Taichung restaurant of Jimmy Lim, a Singaporean chef who the Michelin Guide says honed his skills in world-famous kitchens. A single evening set menu pays tribute to his heritage, and the inspectors describe dishes as complex, sophisticated and understated, with an element of surprise.

Singaporean staples such as satay and chilli crab reappear in new forms and textures that playfully subvert expectations; the guide’s full list also shows a reinterpretation of Hainanese chicken rice.

Good to Know
