A restaurant built as a system

Locavore NXT is the second act of the original Locavore, opened by Dutch chef Eelke Plasmeijer and Indonesian chef Ray Adriansyah in central Ubud. The new project, on the outskirts among rice paddies, is a three-floor complex with a rooftop food forest, beehives, a recycling centre and overnight cabins, so the restaurant works as a small ecosystem.

The tasting menu, built entirely from Indonesian ingredients, excludes imports, dairy and wheat. Dinner begins in a circular bar around a banana tree and continues through a basement with a mushroom chamber. Pairings use only local ingredients, and the dining room doubles as a gallery. The team has won sustainability recognition, including Asia’s 50 Best Sustainable Restaurant Award and a three-star rating from the Sustainable Restaurant Association.

Guests can also book a morning foraging trip with the team in the Buhahan jungles. For something more casual, the same group runs Nusantara in central Ubud. The menu evolves, so check the current format.
