Xu’s Cuisine is the chain’s first outpost and has operated for more than a decade in Wuhou. A tank of live fish by the entrance signals that river and sea fish are central to the menu, which centres on novel Sichuan dishes with a few regional offerings. It holds one Michelin star.
The inspectors note a 24-flavour-profile set menu, offered as an overview of Sichuan cuisine, house-prepared preserved meat, and pond loach seared with green Sichuan pepper, described for its crisp textures and numbing sensation.
There is a terrace and valet parking. Menus change.
