Rùn
Cantonese cooking with a tea-pairing menu at The St. Regis Hong Kong, two Michelin stars.
Cantonese flavours, updated and paired with tea
Rùn is the Cantonese restaurant at The St. Regis Hong Kong, opened in May 2019 and holding two Michelin stars in the 2026 guide. The name means ‘abundance’, which chef Hung Chi-kwong links to the happiness he hopes guests feel.
Hung has said many traditional Cantonese flavours are fading as produce and ingredients change, and he works to bring them back in updated form, combining classic dishes with new techniques and careful plating. Signature dishes have included a black pepper wagyu beef puff, double-boiled abalone soup served in a baby coconut with kelp and goji berries, and barbecued Ibérico pork with honey. The Michelin inspectors single out a wok-fried crab claw with dried shrimp, spring onion and layered bean curd sheet.
An in-house tea master runs a tea-pairing menu in which each new dish is matched with a different tea. The interior, by architect André Fu, resembles a traditional tea pavilion with a contemporary twist. Menus change, so confirm the dishes when booking.
