Jay Fai is the most famous street-food cook in Bangkok, and one of the most unlikely Michelin-starred kitchens anywhere. Supinya Junsuta, known to everyone by the nickname Jay Fai, cooks at an open-fronted shophouse on Maha Chai Road in the old town, working over fierce charcoal-fired woks with a pair of ski goggles to protect her eyes from the heat and smoke. The plastic chairs and the queue outside are part of the picture.
When Bangkok’s first Michelin Guide was published in December 2017, Jay Fai received one star, a decision that drew worldwide attention to the city’s street food. She holds one star in the Michelin Guide Thailand 2026.
The food
The dish everyone comes for is the crab omelette, khai jeow poo: a thick, golden, crisp-edged roll filled with a generous quantity of fresh crab meat. Around it sits a short repertoire of wok classics cooked with the same intensity, including drunken noodles, tom yum with prawns or seafood, stir-fried prawns in yellow curry, curry crab and noodle dishes such as rad na.
What sets the cooking apart is not refinement in the fine dining sense but control of fire and the quality of the seafood. Prices are well above ordinary street food, and the portions of crab and prawn explain why.
The cook
Jay Fai took over the business from her mother and has cooked on the same street for decades. She remains famously hands-on, standing at the woks herself for long days, and the shop is known to stay closed when the ingredients do not meet her standard. That personal commitment is the real reason for the star.
