Kahala
Yoshifumi Mori's Sonezaki Shinchi counter, still evolving after more than fifty years; two Michelin stars.
Half a century at the counter
KAHALA is chef Yoshifumi Mori’s counter restaurant on the second floor of a building in Sonezaki Shinchi, Kita-ku, Osaka, and holds two Michelin stars in the MICHELIN Guide Kyoto Osaka 2026. More than half a century after opening, Mori still does the preparation himself.
The Michelin inspectors describe an unquenchable curiosity: he created a seasoning of rice flour and salt that melts away like snow, makes wine and grows rice, and travels across Japan to find little-known ingredients and introduce them to a wider public, work for which the Ministry of Agriculture, Forestry and Fisheries has honoured him. They compare him to a steel plate polished until it gleams.
