The Restaurant

Numata is a tempura counter on the seventh floor of a Sonezaki Shinchi building. The Michelin Guide describes refined frying: carefully chosen ingredients brought out with Taihaku sesame oil, in a batter with bubbles that keep it light.

Seafood and vegetables that pair well arrive in alternating pairs, and the guest closes the meal by choosing between tendon, tempura over rice, tencha, the same dish steeped in roasted green tea, or tenmusu, an onigiri filled with shrimp tempura. The chef trains the next generation and has understudies run his branch restaurants.
