Toeda
A Karuizawa fine-dining room from a Bocuse d'Or competitor, pairing French technique with Japanese flavours.
The Restaurant
Toeda is the Karuizawa restaurant of chef Tadataka Toeda, who trained in three Michelin-starred restaurants in France and competed in the Bocuse d’Or. The cooking is fine dining with artistic presentation and subtle Japanese flavours, built on regional in-season ingredients.
The signature dish, according to Uchi Japan, is a Shinshu salmon terrine, and the wine list runs to about a hundred varieties, French and local.
