A hotel Cantonese room with a long record

Shang Palace is the Cantonese restaurant at Kowloon Shangri-La in Tsim Sha Tsui. It has a long Michelin history: a hotel press release from 2013 records two stars in the 2009, 2010, 2012 and 2013 guides, under executive Chinese chef Mok Kit Keung, who had more than 35 years’ experience. It is listed with one star in the 2026 guide.

The cooking is Cantonese, mixing traditional and inventive dishes. The 2013 set menus included sautéed garoupa fillet with black truffle, a steamed bird’s nest ball stuffed with scallop paste and sea urchin, and baked Inaniwa noodles with abalone in cheese sauce served in a mini pumpkin. The renovated room seated 146 at that time.

Chefs and menus have changed since then, so the dishes above show the style rather than the current offering.
