Mono
A 30-seat Latin American-meets-French tasting restaurant in Central, from a former Mirazur chef.
Latin American flavours, French technique
Mono is a small restaurant of about 30 seats on the fifth floor at 18 On Lan Street in Central. Chef Ricardo Chaneton previously worked at Mirazur, the three-star restaurant in the south of France, and Time Out describes the cooking as a reinterpretation of Latin American cuisine presented with French technique.
The tasting menu changes regularly. A signature mole is built from more than 20 ingredients, and dishes in one season included Brittany turbot with grasshopper mousse and black garlic, and Tuscan lamb in Caribbean curry with green asparagus. The wine list leans toward Burgundy and Bordeaux.
Mono holds one Michelin star. The small room and set format suit a planned evening rather than a spontaneous one. Menus change, so check the current tasting.
