Gilding Korean food

Le DORER takes its name from the French verb for gilding, and the restaurant’s own line spells out the idea: it sets out to add a touch of gold to Korean food. It is on the second floor of a building on Marine City 3-ro in Haeundae, Busan.

The way in is part of the effect. Michelin describes a walk through a small alley to a speakeasy-like dining room that then opens onto wide views of the sea.

From Korean restaurant to tasting menu

The kitchen is led by a young chef from Busan. Le DORER began as a Korean restaurant and has developed a contemporary style, with light French and Japanese influences, around a tasting menu that modernises traditional Korean cooking, “placing seasonal local ingredients at its core”, in Michelin’s words.

Wine matters here. The restaurant keeps a well-stocked cellar and offers curated pairings, carries a Wine Spectator award, and presents itself as Busan’s first Dom Pérignon Gastronomy partner.

Le DORER won its first Michelin star in the 2026 Michelin Guide South Korea.
