Phở Gà Nguyệt
A family-run chicken pho shop on Phù Đổng Street, from sidewalk stall to Bib Gourmand.
Chicken pho, from a sidewalk stall
Phở Gà Nguyệt serves chicken pho, as a soup or a dry mixed noodle dish, at 5B Phù Đổng in Hoàn Kiếm. Lê Thị Minh Nguyệt, born in Hanoi in 1967, opened it in 2009 with no restaurant background; it began as a sidewalk stall with a few chairs around the pot, and grew into a larger restaurant that she runs with her husband and daughter.
Cooking starts at 4 am, and the broth is simmered from bones for more than 12 hours; ingredients are used the same day and leftovers discarded. The chicken comes in several cuts, and the owner recommends thigh, or a mix of thigh and wings or wings and breast. The owner says the broth is at its best around 8 pm, and the shop is busiest from 5 pm to midnight.
It was listed as a Bib Gourmand in the first Michelin Guide Hanoi and Ho Chi Minh City in 2023 and remains on the 2026 list.
