Vietnamese fusion with a French accent

ZAO opened in Hanoi in early 2025 and expanded to Ho Chi Minh City in early 2026. Michelin lists it as Selected for 2026, describing a lively, laid-back restaurant combining global flair with Vietnamese roots, led by a Hanoi-born chef who returned from a career abroad. A reviewer names chef and co-founder Le Tuan Cuong, who worked in several high-end French restaurants in Vietnam.

The seasonal menu is divided into snacks, starters, mains and desserts, with a chef’s menu. A late-2025 reviewer enjoyed banh bot loc with smoked eel, foie gras and green apple, and a shimeji mushroom dish, found the swordfish belly a little safe, and described Iberico pork cheek with Job’s tears as good as expected. Portions are modest, and service was the least satisfying part of the visit: slow replies and rigid booking rules.

It is at 4 Ngõ Huế, with an open kitchen and wine-bar feel on the first floor and a quieter dining area upstairs. Menus change.
