Jade River is the Cantonese restaurant of the White Swan Hotel on Shamian Island, the 1983 landmark that has long been one of Guangzhou’s best-known addresses. It was among the eight restaurants awarded a star in the first Michelin Guide Guangzhou in 2018, and it holds one Michelin star in the 2026 guide, a rare record of consistency across the city’s Michelin era.

The restaurant occupies the third floor of the hotel, on an island whose colonial-era streets and riverside position make it one of the most atmospheric corners of the old city.

The food

The cooking is classical Cantonese, centred on careful sourcing and clean technique. Poultry is a particular strength. Steamed chicken raised on sunflower seeds, delivered fresh from farms each day, is one of the dishes most associated with the kitchen, a test of how well Cantonese cooks let a good bird speak for itself. Pigeon baked with lemongrass and salt and an assortment of poultry and meats in a white marinade show the same restraint.

Tea is treated seriously too: tea masters brew pots to order at the table, a detail that suits the slow pace of a long Cantonese meal.

The room

The dining room is designed around a traditional garden with water features, fine woodwork and Manchu-style windows of coloured glass, motifs drawn from the Lingnan architecture of southern China. The effect is calm and composed, a contrast to the noise of the city’s teahouses.
