Truffle as an organising idea

Tuber is a dining concept by Umberto Bombana, the Italian chef long associated with Hong Kong’s white-truffle season, and its name refers to the genus Tuber, to which truffles belong. The Michelin guide describes it as dedicated to ‘the black and white treasure of gastronomy’.

The kitchen is run by a head chef who worked under Bombana for more than 20 years and handles seasonal ingredients from around the world, with a tasting menu that offers a choice of dishes from starter to dessert. The only dish the guide names is jumbo carabinero prawns from Spain. The restaurant is in the K11 MUSEA development on the Tsim Sha Tsui waterfront and holds one star in the 2026 guide.

Truffle menus follow the seasons, so the offering varies through the year.
