Rakuichi Soba
A 12-seat soba house in an old cabin at Annupuri, with handmade noodles cut in view of the diners.
The Restaurant
Rakuichi is a 12-seat cabin at the base of the access road to the Annupuri ski area, reached by a long wooden bridge. The soba master, Rai-san, built it himself from local lumber; his wife Midori serves in a kimono.
He makes and cuts the noodles by hand in view of the diners, using buckwheat from northern Japan and spring water from the Yotei and Niseko range, and serves them on a bamboo mat. The choice is a soba and tempura lunch or a kaiseki dinner, which must be reserved.
Good to Know
PowderLife lists Rakuichi as a Michelin recommendation. The restaurant takes cash only, and kaiseki bookings cannot be cancelled within 24 hours, according to JAL’s Japan Travel. See Niseko for the area.
