Cantonese cooking at three stars

Jade Dragon is the Cantonese restaurant on the second floor of NUWA at City of Dreams, behind a discreet entrance. Robb Report recorded it with one star in 2014 and 2015 and two from 2016, and the restaurant holds three stars today. Head chef Tam Kwok Fung has about 30 years of experience and also directs culinary operations for the resort.

In 2018 the kitchen was cooking barbecued dishes in a custom lychee-wood oven, sourcing organic meat from Australia and the Netherlands, and had worked with a Macau university team on Chinese herbal soups. Dishes then included prime-cut barbecued Iberico pork, a dim sum trio with Sichuan-style scallop dumplings and steamed crab dumplings, and a Chinese almond crème brûlée with bird’s nest.

The room, in bronze and muted gold, takes scenes from Zhang Zeduan’s Along the River During the Qingming Festival, with aquariums, an open kitchen and 11 VIP rooms. The article is from 2018, so treat dishes and prices as background.
