The cooking
The modern dining room has glowing double arches, a high glass ceiling and a paper sculpture. Chef Tan serves a tasting menu inspired by the circle of life and his personal journey, blending French gastronomy with Chinese cooking. The dishes use globally sourced ingredients and emphasise contrasts in texture and flavour.
