Odette and Les Amis Win Three Michelin Stars
The 2019 Singapore selection gave the city two three-star restaurants for the first time, rewarding Julien Royer and Sébastien Lepinoy's French kitchens.
Photo: MICHELIN GuideThe MICHELIN Guide Singapore 2019, revealed on 17 September 2019, promoted two restaurants to three stars: Odette, led by chef-owner Julien Royer, and Les Amis, under executive chef Sébastien Lepinoy. It was the first time Singapore held two three-starred restaurants; the 2018 edition had none at that level.
Odette opened in 2015 inside Singapore’s former Supreme Court building and is named after Royer’s maternal grandmother. Its cooking applies French technique to produce from around the world, with Asian touches. “It is a dream come true, an incredible honor and amazing recognition for the team and I,” Royer said after the announcement.
Les Amis, founded in 1994, marked its 25th anniversary with the promotion. The restaurant serves classic French cuisine backed by a wine list of more than 3,000 references. Lepinoy, who had held one star at Cépage in Hong Kong and two at Les Amis since 2016, said he had reworked every recipe in the preceding year.
Further down the list, Saint Pierre was promoted to two stars and Zén entered directly at that level, joining Shisen Hanten, Shoukouwa and Waku Ghin. Seven new one-star restaurants included Basque Kitchen by Aitor, Jag, Lerouy, Table65, Vianney Massot, Cheek Bistro and Meta, for a total of 37 one-starred addresses.
In all, the selection named 241 establishments, including 58 Bib Gourmand addresses. “With two of its establishments promoted to a three-star ranking, Singapore is clearly positioned as a leading gastronomic destination,” said Gwendal Poullennec, international director of the MICHELIN Guides.
