Three of the stars went to Hanoi. Gia, led by chef Sam Tran, serves contemporary Vietnamese cooking that inspectors praised for “well-judged combinations of subtle flavours”. Hibana by Koki, the teppanyaki counter at Capella Hanoi run by chef Hiroshi Yamaguchi, was singled out for dishes “rich in complex flavour”.
The third Hanoi star went to Tầm Vị, a vintage-styled tea house serving traditional northern Vietnamese dishes. In Ho Chi Minh City, the single star went to Anăn Saigon, chef Peter Cuong Franklin’s contemporary Vietnamese restaurant, where inspectors called every dish “a masterclass of well-balanced flavours and textures”.
Beyond the stars, 29 addresses received a Bib Gourmand, 13 in Hanoi and 16 in Ho Chi Minh City, and 70 restaurants were listed as Michelin Selected. Sam Tran of Gia also took the Young Chef Award. The Service Award went to Thi Nu Nguyen of Vietnam House and the Sommelier Award to Yu Yamamoto of Lửa, both in Ho Chi Minh City.
“We’re very proud to finally present the first restaurant selection in Vietnam,” said Gwendal Poullennec, international director of the Michelin Guides.
