De Fa Chang has been making dumplings at 3 West Street on Bell and Drum Towers Square, in Xi’an, since 1936. Its dumpling-making skills were added to Shaanxi Province’s intangible cultural heritage list in 2010, according to the provincial government’s tourism pages.
The famous format is the dumpling banquet, in which every dumpling has its own shape, filling and taste; the house describes it as one dumpling, one form, one flavour. The provincial pages also credit it with 318 dumpling-making techniques and a bid for a Guinness record. It makes an easy meal to combine with a visit to the Bell and Drum Towers.
