Yakitori in a Kanazawa townhouse

Hamaguri-zaka Maekawa (蛤坂 まえかわ) is a yakitori counter in a machiya of about a hundred years, renovated for the purpose, in the Nomachi area of Kanazawa, across the Sai River from Katamachi.

Its chef, Maekawa, trained at Torishiki in Meguro, one of Tokyo’s best-known yakitori restaurants, and later ran its New York offshoot, Torien, before opening here.

One course, two seatings

The format is omakase: a single course of skewers grilled in front of the guests at a small counter, with dishes that bring in Kanazawa ingredients alongside the chicken. The bird is Date chicken, cooked over Kishu binchōtan charcoal for its fragrant char.

There are only two seatings a night, and bookings open on the first day of each month. The restaurant held one Michelin star in the 2021 Michelin Guide Hokuriku.
