Bún Bò Huế Bà Thương
For more than fifty years, a Da Nang shop has ladled out Huế's spicy lemongrass beef noodle soup, now with a Bib Gourmand.
Half a century of one soup
Bún Bò Huế Bà Thương is a noodle shop on Trần Quốc Toản Street in the Hải Châu district of Da Nang, on Vietnam’s central coast. For more than fifty years it has served bún bò Huế, the spicy beef noodle soup of the old imperial capital, Huế, to a mostly local crowd. It joined Michelin’s Bib Gourmand selection for Vietnam in 2025 and still holds the distinction.
Lemongrass broth, pork knuckle
The soup comes in its classic form: a rich broth scented with lemongrass, tender beef and al dente rice vermicelli, served with herbs and vegetables. The bowl can be ordered with sliced beef, pork knuckle or meatballs, and there is also bún giò giả, with pork knuckle and pork rolls.
Diners prize the house-made pickled chilli sauce and the quality of the pork; a visitor quoted by the local press called the knuckle a must, tender enough to fall off the bone.
