A mansion on the Son Tra Peninsula

La Maison 1888 is the French restaurant of InterContinental Danang Sun Peninsula Resort, on the Son Tra Peninsula outside Da Nang, on Vietnam’s central coast. It occupies a recreated colonial Indochine mansion designed by Bill Bensley, reached, as Michelin notes, by cable car up the hill. Inside are a main room, La Veranda, an outdoor terrace and three private rooms, each themed on a fictional sibling.

The restaurant was the first in Vietnam to be overseen by a Michelin-starred chef: first Michel Roux, then Pierre Gagnaire. Today its culinary direction comes from Christian Le Squer, chef of the three-starred Le Cinq at the Four Seasons Hotel George V in Paris, with Jean-Louis Angulo as resident chef de cuisine.

French haute cuisine, rewritten four times a year

The cooking is French haute cuisine with a Vietnamese inflection, served as a five- or eight-course set menu that changes four times a year. Michelin describes premium ingredients from Vietnam, France and Japan, and singles out a gnocchi with truffle and an onion gratin of remarkable depth and balance.

Le Squer’s signature, spaghetti debout, stands the pasta upright, fills it with black-truffle cream and finishes it with truffle and ham. Other dishes shown by the restaurant run from Brittany blue lobster with a broth to wild sea bass with buttermilk and a soufflé scallop with herb granita. “Like perfume or fashion, my cuisine is haute couture,” Le Squer says.

The star and the cellar

La Maison 1888 won a Michelin star when the guide first covered Da Nang, in 2024, and kept it in the Michelin Guide Vietnam 2026; the resort describes it as the only starred restaurant in central Vietnam. The cellar held Wine Spectator’s Award of Excellence each year from 2018 to 2025, and guests can taste with the sommelier among the bottles.
