Salisterra Replaces Café Gray Deluxe at The Upper House

Jun Tanaka of The Ninth London leads the Mediterranean menu on level 49, in rooms redesigned by André Fu in terracotta, burgundy and mineral blue.

The Upper House announced on 22 March 2021 that Salisterra, a Mediterranean restaurant led by London chef Jun Tanaka, would open on level 49 of the Admiralty hotel in mid-April. It takes over the space held for a decade by Café Gray Deluxe, the hotel’s only restaurant, which closed on 31 December 2020.

Tanaka runs The Ninth in London, a French-Mediterranean restaurant holding one Michelin star. At Salisterra he heads the culinary programme, built on the coastal flavours of France and Italy and framed by the hotel as a neighbourhood bistro, with sommelier and mixology teams alongside the kitchen.

The interiors are by architect André Fu. He organised the floor into five distinct dining spaces and used a palette of terracotta orange, burgundy, mineral blue, dusty turquoise and golden caramel, set against the geometry of the skyline outside. Organic forms and sculptural silhouettes were introduced to soften the rooms.

The name combines the Latin words for salt and earth. Service areas are integrated into the dining rooms to bring staff and guests closer, a layout intended, in the words of Swire Hotels, to “deliver a layered and social dining experience high above the city.” The restaurant sits in Pacific Place, 88 Queensway, in Hong Kong‘s Admiralty district.
