Noi by Paulo Airaudo
Paulo Airaudo's seafood-led Italian set menu at Four Seasons Hong Kong, two Michelin stars.
Italian, seafood and a Japanese larder
Noi by Paulo Airaudo is an Italian contemporary restaurant on the fifth floor of Four Seasons Hotel Hong Kong, 8 Finance Street, in Central, Hong Kong. It holds two Michelin stars in the MICHELIN Guide Hong Kong Macau 2026.
Chefs Airaudo and Troiano serve a seasonal set menu of ten or more courses that changes every two to three months, with a strong seafood slant and ingredients shipped daily from Japan. The signature is a silky egg custard infused with Ibérico ham consommé, faintly smoky. The food nods to Italian tradition but is updated with modern plating and technique, and Michelin rates the wine pairings highly.
