Sushi Shikon is on the seventh floor of The Landmark Mandarin Oriental on Queen’s Road Central, Hong Kong, and holds three Michelin stars in the MICHELIN Guide Hong Kong Macau 2026.
The Michelin inspectors write that the kitchen excels at ageing raw fish for deeper, fuller flavour, sometimes together with pickled fish entrails for extra umami, while keeping each piece distinct from the next. The lavish double uni sushi, with bafun uni stirred into the vinegared rice and lobes of murasaki uni on top, has an intense briny sweetness and a buttery texture.
