The Restaurant
Tales by Chapter is described by the Michelin Guide as Vietnam’s first zero-waste, plant-based fine dining concept. Its seasonal menus draw on produce from an eco-farm in Da Lat and herbs grown on the rooftop, trimmings are fermented into new ingredients, and organic waste is composted.
Guests can watch the dishes being prepared at the chef’s counter. Service manager Thanh Vân Nguyễn won the Service Award at the 2026 ceremony.
