NÔM
A Vietnamese tasting menu that moves from north to central, with a southern-inspired dessert.
The Restaurant
NÔM presents Vietnamese cuisine as a journey through the country’s regions, running from the north to the centre and closing with a southern-inspired dessert. Chef Chris Fong won the Opening of the Year Award for the restaurant at the MICHELIN Guide Vietnam 2026 ceremony.
Two dishes are named: a refined Huế-style beef noodle soup, and a fish soup finished with herb oil and caviar. Each floor has small displays of traditional crafts that the guide calls mini-museums.
Good to Know
