Sushi where Shinji used to be
Sushi Kinetsu is on the first floor of Nüwa at City of Dreams in Cotai, Macau, and holds one Michelin star in the MICHELIN Guide Hong Kong Macau 2026. It is the reincarnation of the upmarket omakase restaurant Shinji by Kanesaka, which closed during the Covid-19 period, and the same kitchen team makes the sushi as before.
Fish is flown in from Japan three times a week. The rice, from Yamagata, is cooked in spring water from Kagoshima and dressed in a light vinegar. There are two menus, and booking is essential.
