Two generations at Ngô Gia Tự

Bò Kho Gánh is a family eatery in the Ngô Gia Tự apartment blocks off Sư Vạn Hạnh Street, in the old District 10 of Ho Chi Minh City. The family started out in 1975 with a small stall selling chè, sweet dessert soups, on Sư Vạn Hạnh Street, and built their living from there; the recipe for the stew has been kept through two generations, Cô Phúc, who founded the business with her husband, and Chị Nguyên.

It has held a Michelin Bib Gourmand since 2024 and, by its own account, is the only bò kho specialist on the Bib Gourmand list in the city.

Braised beef, bread to dip

Bò kho is a Vietnamese beef stew, and here it is cooked to an old Saigon-style family recipe, with ribs from yellow calves raised in Củ Chi braised until very soft, their fat enriching the broth. Michelin describes a broth that is sweet and savoury with a robust, meaty depth.

The stew comes hot in a clay pot or ceramic bowl, with bread, noodles or rice, and diners help themselves to condiments and sauces. Bánh mì bò kho, crisp bread dipped in the broth with tender beef and basil, is a menu staple; hủ tiếu noodles and clay-pot rice complete the menu.
